1. Taleggio is a washed rind cow's milk cheese from the Lombardy region of Italy. It is produced in the Val Taleggio, an alpine region near Bergamo and historically it dates back to the ninth century! We have sourced a true artisan Taleggio produced by Coop San Antonio and aged at CasArrigoni. Its flavors are meaty and a little bit fruity. The texture is dense and pudding-like. While Taleggio has become ubiquitous, the DOP and mountain designation ensures an authentic Taleggio of incredible quality.
