Cascadia Creamery uses certified organic cow's milk to make an array of cheeses that age in a special aging room built inside a lava tube. This natural cave has the perfect temperature and humidity for ripening cheese. Sawtooth is a milder washed rind cheese with savory, meaty flavors balanced by a fruity funk. Its texture is smooth and fudgy. The cheese is a terrific reflection of the minerally rich, snow-capped volcanic region of the Cascade Mountains, a true reflection of the terroir.
