Pecorino Balze Volterrane is from Tuscany, Italy and made from raw, sheep's milk. The milk is coagulated by using a wild local artichoke, making it suitable for vegetarians. The wheels are coated in olive oil and rolled in wood ash. This pecorino is on the milder side though full flavored.
