WThe real Mozzarella di Bufala has to be produced following the rules set forth by the Consorzio Tutela Mozzarella di Bufala Campana. Production is defined by geographic region, and it may only bear the DOP stamp if it is produced by the rules and in the production area, which extends from southern Lazio to the northern part of Campania, and some parts of Apulia. Because it is a fresh cheese and extremely delicate with a rather short shelf life we only bring it in late July and into early September.
